Walnut and raisin fudge slice

Paleo, Raw, dairy free, gluten free, sugar free

Ingredients

2 ½ cups almond meal 100 gms or 1 handful chopped raisins

100 gms or 1 handful chopped walnuts

1 tablespoon unhulled sesame seeds

250 mls tasteless coconut oil

1 heaped teaspoon ground vanilla bean powder

2 dessert spoons cacao powder

2 tablespoon coconut nectar

Method

Chop the walnuts and the raisins. Melt the coconut oil in a saucepan take off the stove then add all the ingredients together. Mix well. Line a slice tray with glad wrap or greased paper. Sprinkle the bottom of tray with desiccated coconut then add the mix, pat down firmly, flat and even. Finally sprinkle the top with desiccated coconut and put in the fridge to set. Takes about 1 hr to set.

Once set, cut into even squares and store in an airtight container in the fridge. Will keep for a month. If left out go the fridge for too long the slice will soften. This fudge slice mix can also be rolled into balls, then coated in desiccated coconut and kept in the fridge. Yum yum!
