Sweet fresh Cherries and Honey cake.

This cake is absolutely delicious, it's moist and full of healthy nutritious ingredients.
Gluten free, no refined sugar, low to med GI. High protein, rich in antioxidants, dairy free.
1 tin cooked black beans or butter beans(drained)
125mls coconut oil
1/3 cup Raw Cocao powder
4 organic eggs
1/2cup raw honey
1teaspoon Bi carb soda
2/3 cup almond meal
Pinch of salt
1teaspoon organic raw vanilla powder/paste/or essence.(I prefer the powder)
2/3 cup fresh seasonal cherries (can use tinned if not in season just drain the juice off)
Prep time is about 10 mins
Cut the cherries and take out the pips. Lightly chop so you still have some chunks. Drain the black beans.
In a blender or food processor (I use a high powered blender) place all the ingredients accept the cherries into the blender and combine.
Grease the round tin and place half the cut cherries on the bottom. Then mix by hand (don't use the blender now as you want the bits of chunky cherry in the cake)the last half of the cherries in the cake mix before you pour on top of the Cherry lined tin.
Cook on about 170'c moderate oven for about 35/40 mins.
Use a 23cm Round ring tin.
Once cooked let cool before you add the icing.
1 ripe Avocado
2 heaped tablespoons of powdered coconut sugar(or you may use organic icing sugar it's just high in GI so be mindful of this)
1 1/2. Tablespoons cacao powder (raw chocolate powder)
1/2. Teaspoon of Organic powdered Vanilla of essence.
You may double this icing recipe for a thicker icing on the cake. (This recipe would also work as a brownie mix in a small slice tray.)
Place all ingredients into the blender or food processor. Combine till smooth and creamy texture. You don't want any avocado lumps just doesn't look good on the cake. Your friends and family won't have any idea your now using the finest most wholesome ingredients..
Ice the cake and put fresh cherries into the middle of the cake serve with cream, ice cream or coconut yogurt.. Yum yum.
Keeps for up-to 4days in the fridge.
