Apple and Banana Gluten free Muffins

 No Added sugar, Dairy free, Nut free, High Fibre & Gluten free (if needed)

Prep time ; 8 mins Cook time approx 25min at 180*C

1/2 Grated Apple

2 Large Bananas Mashed

2 teaspoons Organic Vanilla Essence

½ teaspoon   Mixed Spice

¼ cup Chia Seeds

2 Eggs

1/3 cup coconut oil

¾ teaspoon Pink Himalayan Crystal salt

¼ cup sunflower seeds

1/3 cup Honey

1/3 cup dark choc chips

1/3 cup Dried Goji Berries

1 ½ cups  Organic
Spelt flour.

2 teaspoons baking powder

Method : Fenella’s Keep it Simple method..(One pot/mixing bowl wonder)

 Mash bananas, grate
apple and put in a mixing bowl. Add eggs, honey, vanilla essence, mixed spice and
coconut oil.(if your coconut oil has gone solid melt it first before you do
anything else.)

 Mix together with a
wooden spoon till combined. Then add salt, baking powder, sunflower seeds, Chia
seeds, Goji berries and choc chips. Stir through then add Organic spelt flour. Mix
in flour till all combined (no need for mixer).

Please note:this recipe can be gluten free if you substitute
the Spelt flour with gluten free flour mix .Ive used both and each works out.

Put into muffin tray with baking cases  . Cooks for approx 25mins at 180*C.

MAKES 12 Muffins.
