Lime and Salmon Patties

Lime and Salmon Patties( gluten free)

400gms of fresh salmon or tinned

1/2 red capsicum chopped

1/2 cup peas and corn either fresh/tinned

1 dessert spoon chia seeds

Juice of 1 lime and 1/2 of rind grated

large handfull of fresh Parsley chopped

large handfull of greens from celery tops

1 teaspoon celtic sea salt

3 eggs

4 Heaped tablespoons of fine polenta or maize meal

Coconut oil for frying

Extra polenta for rolling patties in before frying adds a lovely crunchy
coating.

(optional. include 1/2 onion and garlic clove if so desired)

Method /prep time approx 10 mins

Chop all vegies and herbs put into a mixing bowl with all other ingredients
then mix until well combined.

Make patties and roll into polenta before frying.

Cooking time approx 15 minsand makes about 12.

Add to a salad with avacado and walnuts for the perfect Brain food Meal!
Goes well with a dash of Honey and lime juice salad dressing.
